With the help of Xabi, from Xabi Cacao Tasting, we have prepared some very surprising pairings:

Our cheeses and different types of chocolate!

We start with our Camembertiz and a dark milk chocolate that comes from the area of San Juan de Bigote in the province of Piura, Peru. This chocolate is very special because it comes directly from one of the farms that the Tesoro Amazónico brand owns in Peru. The particularity is that it has 55% cocoa, cane sugar, powdered milk, natural cocoa butter of the same origin and lecithin. It is a milk chocolate but with a higher than standard amount of cocoa, a delight.

Another exquisite combination: our soft cheese with bífidus + dark chocolate with candied oranges.

This 70% dark chocolate comes from Nicaraguan farms, which are well known and selected by Maüa’s colleagues. (In addition, its name already indicates that the bars combine local products from Mallorca and cocoa from Nicaragua). Its special feature is that it has inclusions of Mallorcan candied orange.

An exquisite combination of flavours that mixes the smoothness of our cheese with the power of this fantastic chocolate.

We propose a hazelnut cream to accompany our hard Kamiku cheese, which is a flavour bomb. It contains a mixture based on a selection of premium hazelnuts and the highest quality cocoa.

Its intense flavour combines perfectly with the creaminess, aroma and natural flavour of our cheese. A mouthful that will conquer all palates

Our smoked Kamiku cheese (with beech and oak wood), pairs wonderfully with a Dulcey de Valrhona chocolate: a caramelised white chocolate created by the great Valrhona industry. It contains 35% butter, which makes it very silky.

Together they are an unstoppable team. The intensity of the smoked cheese is perfectly offset by the texture, subtlety and taste of this surprising chocolate.
