Kamiku Cheesecake

18 de June de 2025

With our cheeses, you can make exquisite cheesecakes. Below, we share the cheesecake recipe from @sarten_y_cazo, made with our cured cheese, but there are other versions as well, such as the dessert from Cicciobella pizzeria, a delicious cheesecake made with our tender cheese with bifidus. And if you want to innovate a little, why not try using smoked cured cheese?

Ingredients for @sarten_y_cazo’s cheesecake:

  • INGREDIENTS:

-125 g of Kamiku hard cheese

-475 g of cream cheese
-400 ml of heavy cream (35% fat)
-6 eggs
-100 g of sugar
-125 g of your favorite cookies
-25 g of butter

  • INSTRUCTIONS:

1️⃣ Crush the cookies and mix them with the melted butter.
2️⃣ Take a 25cm removable mold and press the cookie mixture into the base using a spoon.
3️⃣ Chill the mold in the freezer for 30 minutes.
4️⃣ Meanwhile, in a food processor or blender, mix the grated Kamiku cheese, cream cheese, heavy cream, eggs, and sugar.
5️⃣ Pour the mixture into the mold.
6️⃣ Place the tray on the second rack of the oven and bake at 180°C (top and bottom heat) for 33 minutes.
7️⃣ After this time, increase the temperature to 210°C to start broiling. The exact time will depend on your oven’s power, so be careful not to burn it.
8️⃣ Once the top is nicely browned, remove the cheesecake and let it rest for 5 minutes outside the oven.
9️⃣ Finally, refrigerate it for 5 hours before serving.

Now just enjoy the result!

UPDATE

You can now try our Kamiku cheesecake at our cheese bar in Madrid (Calle Alcalá 90).

Made with our soft cheese with bifidus, Gold Medal in 2025 at the International Competition in Lyon, France. That’s why it’s so creamy — it melts in your mouth and tastes so good you won’t stop until it’s gone. Absolutely amazing. Come try it at our shop or pick it up to go.
